San Marzano is a very delicate tomato, with a thin skin, which retains its flavor for a long time even when stored, but which must be handled with care. Cultivated in the very fertile territory, which is mainly found around Naples, in the Agro Nocerino – Sarnese, in the province of Salerno, it is recognized by the DOP. It is first seared, then peeled by hand and subsequently immersed in its soft San Marzano juice, it is ideal for tasting an excellent spaghetti, even a simple one, enhancing its taste with abundant scented basil.
