Maltodextrins are a mixture of complex and water-soluble carbohydrates formed mainly by dextrose units linked together by 1-4 α glycosidic bonds.
Maltodextrins are obtained mainly by hydrolysis of starches from cereals or tubers. Depending on the manufacturing process, maltodextrins with more or less long and complex chains can be obtained.
The degree of complexity is defined by the dextrose equivalence index DE which can take values from 3 to 20 (Bambang N. et al. 2016. Physical properties of maltodextrin DE 10: Water sorption, water plasticization and enthalpy relaxation). The DE index represents the ease with which a starch is digested. The higher the DE value, the shorter the starch chain present, making it easier to digest.
Pure Maltodextrin DE 19 thanks to its high DE value guarantees a rapid source of energy over time, useful for saturating glycogen reserves if taken before a workout, or for rebalancing energy reserves after a workout (Nina P. 2011. Directions for use: dissolve the product in 200 ml of water. Shake the mixture well before drinking.
